Herb Vinaigrette Dressing Serves 4

Ingredients: 1/2 cup white wine or champagne vinegar
1 1/3; teaspoons Dijon mustard
1 teaspoon salt ? black pepper to taste
1/2-1 teaspoon sugar to taste
2/3 cup olive oil (preferably extra-virgin)
2 tablespoons mixed fresh herbs—tarragon, chives, thyme and/or parsley.

Instructions: 1. In a small bowl, whisk together the first 4 ingredients.
Whisk in the olive oil and then mix in the herbs.
Correct the seasoning, if necessary.
Chill the dressing.
2. Dressing is best if made a few hours
before serving the salad,
so the ingredients can meld.
3. Bring the dressing to room temperature before
serving the salad.
