Eggs in a Hole Serves 1 (In camping circles, “Toad in a Hole”)

Ingredients: 2 links of Southwest Style Sausage 1/4 cup Your Favorite Chili* 1 tablespoon olive or other oil 2 slices of French or Italian bread (Try and find a loaf that is about 4 inches wide,
and then cut out a hole about 2 1/2 inches diameter out of the center of each slice.) 2 large eggs 1 tablespoon cilantro, chopped

Instructions: 1. Heat the chili, then reduce heat and cover to keep warm.
2. Lightly sauté the sausage in a pan lightly greased,
or sprayed with olive oil spray. Cover and keep warm.
3. Heat the olive oil in a another sauté pan over medium heat.
Add the bread, and when it’s lightly browned on one side turn it over.
4. Crack the eggs carefully into the hole in the center of the bread.
5. Raise the heat to medium high and cook for about another 2 minutes.
6. Flip the bread and eggs and cook another 1 minute.
7. Now, put it all together on a plate: the eggs and sausage,
with the chili ladled over the eggs.
Garnish with cilantro.
* The amount of chili or sauce you
use depends on your personal taste.
